U.S. tomato prices rose by approximately 20%, while lettuce prices surged 32% between June 2025 and June 2026. Agricultural economist Elizabeth Canales attributes these price spikes to a layered crisis: abnormal freezes in Florida, labor shortages, soaring energy and shipping costs, the fallout from the Iran war, and trade policies under the Trump administration. Production costs account for only about one-third of the retail price of fresh produce, meaning these increases may not fully translate to higher consumer prices. While experts view this as a temporary shock, structural changes in the agriculture sector could pose long-term risks.
